It is a return to the old, original tradition of sparkling wine production. Pét-nat stands for authentic craftsmanship in mostly small quantities and for a natural handling of wine. No additives nor extra sugar. This method involves bottling before first fermentation has finished, allowing the process to complete in bottle.
